Ingredients in Cookies
Room Temperature Components: When baking these cookies, using room temperature ingredients (butter, shortening, eggs) can help you get the best results. At 65°F, butter is at room temperature. If you forget to take it out of the refrigerator, chop it up into little pieces and let it sit out instead of putting it in the microwave to soften it.
Any fat or oil that is solid at room temperature is referred to as shortening (hydrogenated vegetable oil). Shortening is what you’ve either heard about or seen in the form of a large can of Crisco. It has a long shelf life and may be kept at room temperature. It’s difficult to make substitutions with shortening because it’s all fat. If you must substitute for shortening, lard is the best option because it is also 100% fat. When substituting lard with shortening, use 2 tablespoons less lard per cup of shortening.
Cornstarch: Cornstarch holds the huge cookies together while keeping them moist.
Chocolate: For a Twix-inspired cookie, we found that milk chocolate worked best, although semi-sweet chocolate can do in a pinch.
Caramel (store-bought vs. homemade)
In my testing, this turned out to be the most crucial aspect of the recipe. I was curious to test how store-bought compared to handmade. It didn’t work! It doesn’t taste anything like Twix caramel, and the cookie has a distinct flavor profile as a result.
If you have to buy caramel sauce, be sure it’s not caramel syrup (the kind that pours easily and is drizzled over ice cream). When using store-bought sauce, use a little less than you would if making it from scratch, and freeze the cookies after adding it so the caramel solidifies before covering with chocolate.
This isn’t truly “homemade” caramel since I began with caramel pieces. When reproducing the Twix taste profile, however, this was the greatest choice. You may also use individually wrapped caramels; just be sure to unwrap them first. The quantity required would be the same, 11 oz.
How to Make Cookie Recipes Inspired by Twix
Make the caramel sauce while the cookies are cooling. Combine the caramel pieces, heavy cream, and salt in a medium microwave-safe bowl. Microwave in 30-second intervals until smooth, stirring after each 30 seconds.
Using around 1-2 teaspoons of the caramel sauce, drizzle it over each cookie. It should be thick, but not so thick that it spills over the edges of the biscuit. Melt the milk chocolate chips after you’ve covered the cookies with the caramel. On top of the caramel, sprinkle roughly a half-teaspoon of chocolate. With the back of a spoon or an offset spatula, smooth it out.
How to Keep Cookies Safe
Refrigerate the cooked cookies in an airtight container for up to a week. Between layers, I prefer to place a piece of parchment or wax paper. However, I don’t believe you’ll need to keep the cookies since they won’t last long! That’s right, they’re that fantastic!

- 12 cup (1 stick, 113g) softened butter
- 12 cup shortening (102.5g)
- 1 cup granulated sugar (200g)
- 2 big room-temperature eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour (375g)
- cornstarch (2 tblsp.)
- 1 tsp. salt (kosher)
- 12 teaspoon powdered baking soda

- 1 unwrapped bag of caramel bits or caramel candies (11 ounces)
- a couple of teaspoons of heavy cream
- a quarter teaspoon of kosher salt
- 1 cup chocolate chips (milk)

Preheat the oven to 325 degrees Fahrenheit. Set aside a baking sheet lined with parchment paper.

In a large mixing bowl, cream together the butter, shortening, sugar, eggs, and vanilla using a handheld mixer.

Add the flour, cornstarch, salt, and baking powder to the butter mixture. Mix until all of the ingredients are combined.

Spread the dough out onto a prepared baking sheet, approximately 2 inches apart, using a 14 cup (or 2 scoops of dough with a 2 tablespoon scoop). (For each cookie sheet, I normally place 6 cookie dough balls.) Flatten each ball of dough with the bottom of a glass to a thickness of 14-12 inches. (If using two 2 tablespoon scoops, mix the dough scoops to make one big cookie.)

For a softer cookie, bake for 12 minutes; for a harder cookie, bake for up to 14 minutes.

Remove the cookies from the oven and place them on a wire rack to cool while you make the caramel.
Topping

Combine the caramels, heavy cream, and salt in a medium microwave-safe bowl. Microwave for 30 seconds at a time, stirring after each, until smooth.

Using a spoon, smear 1-2 teaspoons of caramel onto the cookies. (Reheat the caramel in the microwave if it hardens.)

Add chocolate chips to a medium microwave-safe bowl. Melt for 30 seconds at a time, stirring after each interval, until smooth.

Place roughly a spoonful of melted chocolate on top of each biscuit after the caramel has set. Enjoy!
