These strawberry popsicles are likely to become a summertime favorite! These popsicles, made with Strawberries in season, Yogurt from Greece, and a smidgeon of honey, are a delight with both adults and children.

Summertime is peak popsicle season if you’re a parent or grandparent.

As soon as the weather warms up, I know we’ll need to fill the freezer with popsicles, even if it’s just a box of freeze pops, as well as rocky road ice cream and no-churn ice cream. 

After all, there’s nothing like reclining with a popsicle after coming out of the pool on a hot summer day.

Even while I like sophisticated popsicles like roasted berry goat cheese popsicles, prosecco popsicles (for the grownups), and banana split popsicles, there are times when I simply want to keep it simple.

This summer, we’ve been making strawberry popsicles on a regular basis. They’re as simple to make as buying a box of popsicles, yet they’re now a top desire around here.

POPSICLES WITH STRAWBERRIES THAT ARE EASY TO MAKE AT HOME

Have you tried Outshine fruit popsicles before? They’re fantastic, but they’re also somewhat pricey.

They’re my favorite since they’re jam-packed with fruit. They have a fantastic texture that isn’t at all chilly.

Even while these homemade strawberry popsicles aren’t an exact replica of Outshine’s, the creamy, delicious feel is quite similar.

Fresh, juicy strawberries are used to make these handmade popsicles. I also added some Yogurt from Greece to my peaches and cream popsicles to keep them creamy, give a little of acidic taste, and sneak in some protein. 

To avoid sounding like “that mom,” I also like that they include just a smidgeon of honey rather than a slew of sugar. I don’t believe a lot of sugar is necessary since the Strawberries in season are sweet enough!

So, although my family thinks they’re a nice summer treat, I can rest easy knowing that they’re largely eating fresh fruit and a little amount of yogurt rather than something with a lot of added sugar. 

Oh, and they’re really simple to make!

STRAWBERRY POPSICLES: HOW TO MAKE THEM

This strawberry popsicle recipe is a must-try if you have a lot of Strawberries in season on hand.

You’ll need the following Ingredients:

Long ingredient lists have their time and place, but this recipe isn’t one of them. To prepare these popsicles, you’ll only need five easy Ingredients:

  • Strawberries in season
  • Milk
  • Yogurt from Greece
  • Honey
  • Extract of vanilla

I have all of these items on hand at all times, particularly during the summer. 

In fact, if you like yogurt and fruit for breakfast, these popsicles are a frozen treat version of that.

For the basis of this recipe, you’ll need 1 cup of strawberry puree. You’ll need roughly 2 cups of hulled and halved strawberries to make 1 cup of puree.

Is it possible to use frozen strawberries?

If you are out of Strawberries in season or want to make these popsicles when strawberries are out of season, the good news is that you CAN make this recipe with frozen strawberries.

Simply defrost the frozen strawberries before pureeing them, then follow the recipe’s Instructions.

The final popsicles won’t have the same perfectly creamy texture as when they are made with Strawberries in season, but the flavor is still great and they are still the perfect summer treat!

You’ll need the following equipment.

A blender or food processor (to puree your strawberries) and popsicle molds are the two primary items you’ll need, in addition to measuring cups and a dish.

A 3.25-fluid-ounce popsicle mold is my favorite. This recipe will yield 6 popsicles if you use this size.

If you select a smaller or bigger mold, bear in mind that the recipe may yield more or fewer popsicles and will require less or more time to completely freeze.

Creating this dish

Simply mix together the strawberry puree, milk, yogurt, honey, and vanilla to produce the popsicle foundation. 

Pour the mixture into the popsicle molds after adding the chopped strawberries. Make sure the molds aren’t overflowing!

Add your popsicle sticks and freeze the popsicles for at least 4 hours, however depending on your freezer, they may require longer time to properly set.

You’re ready to enjoy your homemade popsicles after they’ve completely frozen!

VARIATIONS ON THE RECIPE

This dish may be altered in a variety of ways to fit dietary restrictions, food allergies, and personal tastes.

For a dairy-free version, use your favorite dairy-free milk and yogurt. Using a coconut-based milk and yogurt would be especially delicious with the Strawberries in season.

Use your preferred dairy-free milk and yogurt, and replace the honey with agave nectar or maple syrup for a vegan alternative.

Try swapping the plain Yogurt from Greece with a flavored Yogurt from Greece, such as vanilla, honey, or strawberry.

And lastly, don’t limit yourself to just Creating this dish with strawberries! Sure, it’s a strawberry popsicle recipe, but that doesn’t mean you can’t try it with other fruits!

Use raspberries, peaches, mango, blueberries, or a mix of your favorite fruits in this recipe. Your creativity is the only limit!

Try these strawberry popsicles for your next pool party, summer movie night, or just as a refreshing treat on a hot day. They’ll be a hit with the entire family!

Ingredients

  • 1 cup pureed strawberries (from about 2 cups hulled and halved Strawberries in season)
  • milk (six tablespoons)
  • ½ cup plain Yogurt from Greece
  • honey (two teaspoons)
  • ¼ teaspoon Extract of vanilla
  • ½ cup diced Strawberries in season

Instructions

  1. Combine the strawberry puree, milk, yogurt, honey, and vanilla in a mixing bowl and whisk until smooth. Toss in the chopped strawberries and mix well.
  2. Fill popsicle molds with the mixture and add sticks. Allow for at least 4 hours of freezing time.

Notes

  • This recipe can work with thawed frozen strawberries, but if you only have frozen berries, you may want to remove the chopped strawberries.
  • You may substitute a flavored Yogurt from Greece (such as vanilla, honey, or strawberry) for the plain Yogurt from Greece if you prefer.
  • Use your favorite dairy-free milk and yogurt to make a dairy-free variation. Use dairy-free milk and yogurt, and replace the honey with agave nectar or maple syrup for a vegan alternative.
  • The amount of time it takes to freeze depends on your freezer.
