The name “chai” technically means “tea,” yet there is no tea in this banana bread. The spices we add in the quick bread give it a chai taste. We combined the classic spices found in masala chai tea recipes, such as cardamom and ginger, with a delicious banana bread.

This banana bread recipe begins with a simple banana bread batter prepared using the following Ingredients:

- The finest bananas are those that are fully ripe. The riper the banana, like with most banana quick bread and muffin recipes, the sweeter and moister the final bread will be. For the finest taste, use bananas with a few brown spots. They’re also a lot simpler to crush! Make sure they aren’t entirely dark and overripe, since this will result in them being too mushy.
- Do not overmix the Ingredients. When you overmix the mixture, the gluten proteins in the flour get activated, resulting in a thick, tough fast bread. All you have to do now is whisk in the dry Ingredients until there are no large lumps of flour visible. It’s OK if the batter isn’t totally smooth or blended.
- Storage: Wrap cooked banana bread in foil once it has cooled. In a zip-top bag, place the foil-wrapped loaf. To keep the freshness and wetness, squeeze away any extra air.
Is it possible to freeze it?

- 12 cup mashed banana (about 3 medium bananas)
- ⅓ cup Yogurt from Greece
- 5 tbsp. butter (melted)
- 2 eggs
- 12 cup sugar, granulated
- ½ cup light Brown sugar is a kind of sugar that is used packed
- 14 cup all-purpose flour 2 14 cup all-purpose flour
- ¾ teaspoon Soda (baking)
- a quarter teaspoon of salt
- 34 teaspoon cardamom powder
- a quarter teaspoon of cinnamon
- 14 teaspoon ginger powder
- a quarter teaspoon of allspice
- 1 ¼ teaspoons pure Extract of vanilla divided
- a third of a cup of confectioners’ sugar
- 1 12 tblsp. milk
Instructions

Preheat the oven to 350 degrees Fahrenheit. Spray a 9 X 5-inch loaf pan with nonstick cooking spray.

Combine bananas, yogurt, melted butter eggs, and 1 teaspoon vanilla extract in a mixing dish. Mix until everything is well combined. Mix in the sugars until well blended.

In a medium bowl, whisk together flour, Soda (baking) and salt.

Combine the cardamom, cinnamon, ginger, and allspice in a small bowl. 1 1/2 teaspoons of the mixture should be added to the flour and mixed well.

Mix in the dry ingredients until barely mixed with the banana mixture. Pour the batter into the loaf pan that has been prepared.

Preheat oven to 350°F and bake for 55-65 minutes, or until toothpick inserted in middle comes out clean.

Allow 10 minutes for the bread to cool in the pan on a wire rack before removing it to cool entirely.
Glaze

Combine the confectioners’ sugar, remaining spice mixture, remaining 1/4 teaspoon vanilla, and milk in a small mixing bowl until well blended. Drizzle the sauce over the bread.

Store firmly wrapped in foil in a zip top bag with the air removed when the glaze has set.
