While Tabasco Family Reserve has a deeper taste, a cursory look at the ingredients list may not convince you of that. Tabasco Family Reserve, like its Original Red Sauce, has just three ingredients: white wine vinegar, red peppers, and salt.
At its core, this is a Louisiana-style hot sauce, having a lot of parallels to Tabasco’s Original Red Hot Sauce. The main difference between the two is the kind of vinegar used. Tabasco Original Red and Tabasco Family Reserve employ distilled vinegar (white vinegar) and white wine vinegar, respectively. Beyond that, it’s a question of bottle proportions and oak barrel age time.

Tabasco Family Reserve’s vinegar profile is more complex than those of other Tabasco Family hot sauces. The white wine vinegar imparts not just a sharpness, but also a warmth (ever so slightly fruity) that remains. It mingles with the tabasco chilies’ spicy sting and just enough saltiness to pique your interest.
A layer of smokiness runs through it all, thanks to the extended age in oak barrels. Tabasco Original Red may last up to three years in the refrigerator. It’s more like a lingering wisp that hums along behind the more assertive vinegar, chili pepper, and salty notes.

When it comes to salt, the sodium content is 45 mg per teaspoon, which is minimal compared to other Louisiana-style red sauces. The salt content is just 10 mg more than the original Tabasco. Tabasco Family Reserve is a wonderful spicy sauce to keep in mind if you’re managing your salt consumption.
Although the chilies in Tabasco Family Reserve aren’t identified, tabasco peppers are often utilized in Tabasco products. These chilies have a medium heat level (30,000 to 50,000 Scoville heat units), similar to cayenne pepper.
However, if you combine those chilies with other things, the spiciness is lessened. The end product is a spiciness that is quite close to Tabasco’s original sauce. Tabasco Family Reserve has a low-medium heat, similar to the original red Tabasco (2,500 to 5,000 Scoville heat units.)
To put it in context, fresh jalapeo peppers have a heat level of 2,500 to 8,000 SHU. As a result, Tabasco Family Reserve falls within the same category. You can manage this spicy sauce if you can handle a jalapeo.
There’s a bit more balance here than there was in the original (which is reasonably balanced as it stands.) It’s because the vinegar adds depth to the sauce, making it seem more substantial than the Original Red, and the overall degree of jalapeo heat fits in even better. Due to the broader overall taste, it doesn’t seem as competing with the tang as it does with the original.
The taste sensation: Spiciness reaches the tip of your tongue, warming up your mouth, but not the back of your throat. It rapidly mellows down and settles into a wonderful spicy warmth. Tabasco Family Reserve (like the original) may, however, build up in your mouth, particularly if you’ve splattered it all over your food. Due to the way dasher sauces are applied, it might seem like a rather extended sting of spiciness.
You can use Tabasco’s Family Reserve sauce on just about anything, in classic Tabasco fashion. Seriously. I’ve used it in a variety of dishes, including eggs, ramen, Bloody Marys, steak, and so on.
This spicy sauce has worked well with red meats. The warmer (but still tangy) taste and touch of smokiness complement the rich flavor of the meat well. Using Tabasco Family Reserve on meaty veggies like cauliflower or mushrooms has the similar effect.
It’s also an excellent hit everywhere you’d use a Louisiana-style spicy sauce (Cajun meals, fried foods, etc.).
Tabasco Family Reserve is the most collectable Tabasco sauce, only rivaled by Tabasco Scorpion Sauce (which is also pretty tasty). The concept of anything “restricted” or “reserve” coming from a firm that creates popular but mass-market condiment staples has piqued the interest of many people. And, best of all, when they try it, they are not disappointed.
The label retains the traditional Tabasco appearance, but with a more antique feel (which I love.) It seems to be aged, as if the bottle has been waiting for the ideal opportunity to be opened for eight years. It’s fantastic. While maintaining the traditional Tabasco logo front and center, it’s a pleasant touch.
