Strawberry Delight That Doesn’t Need to Be Baked
Desserts made with fresh strawberries are so light and refreshing. (Have you tried my Trifle of Strawberry Shortcake?) And, to top it off, it’s a no-bake dessert, which means you won’t even have to turn on your oven! The crust for this pie comes from my Woolworth Icebox Cheesecake Recipe (which you must try)! The crust is then covered with cut strawberries and a luscious cream cheese and whipped cream topping.
Ingredients for Strawberry Delight
This recipe is divided into two parts: the crust and the topping.
To make the crust, you may purchase graham cracker crumbs (about 2 cups). You may also smash graham cracker sheets. For 2 cups of crumbs, you’ll need around 11 complete sheets of graham crackers.
Cream Cheese: Before using, make sure the cream cheese is at room temperature.
Jello Mix: You will only need 1/4 cup of dry strawberry jello mix, not the full box. This gives the topping a bit more strawberry taste.
Whipping Topping: The whipped topping will be combined with the cream cheese as part of the topping, as well as placed on top for extra sweetness and creaminess!
Is it okay if I use a different pan size?
Yes, you may prepare this dish in a variety of pan sizes. I used an 8-inch baking pan. However, a 9-inch dish would suffice. In fact, you could squeeze this recipe into a 7-inch pan for a truly thick dessert. A 9-inch by 13-inch baking dish would be too huge (the layers would be too thin).
Is it Possible to Use Frozen Strawberries?
Yes. Slicing them while they’re still frozen is a good idea. Then, before adding them to the dessert, let them defrost and drain.
How Long with Strawberry Delight That Doesn’t Need to Be Baked Last?
You’ll have a hard time stopping yourself from devouring this delight once you taste the smooth and velvety strawberry top layer with the thick graham cracker shell. However, you may keep it covered in the refrigerator for up to five days.

Crust
- 2 cups graham cracker crumbs (168g)
- 1 tbsp sugar (granulated)
- melted 12 cup (1 stick or 113g) butter
- 1 pound thinly sliced whole strawberries (save 1/4 cup to dice for garnish)
Toppings
- 2 blocks (8 ounces each) room temperature cream cheese
- 1 cup confectioners’ sugar (125g)
- 2 teaspoon vanilla extract
- 2 tsp lemon juice, freshly squeezed
- 1 box strawberry jello mix (3 oz.)
- 3 cups whipped cream (divided)
Crust

Preheat oven to 350°F. Line an 8×8-inch baking dish with parchment paper, going all the way up the edges.

Combine the graham crackers and sugar in a medium mixing dish. Combine all of the ingredients.

Toss the graham crackers and sugar with melted butter. Mix until all of the ingredients are well distributed and there are no dry areas.

Using your hands, firmly press the crumbs into the bottom of the prepared baking dish.

Slice the strawberries and place them on top of the crust, saving 5 pieces to dice for the garnish. While you’re preparing the toppings, place in the refrigerator to cool.
Toppings

Cream cheese should be placed in a large mixing dish. Cream the cream cheese with a hand mixer on medium speed until smooth. Add the sugar, vanilla, and lemon juice and continue to beat until the mixture is smooth and no lumps remain (about 3 minutes).

Take the crust out of the fridge and set it aside. On top of the strawberries, spread half of the cream cheese mixture.

Fold 14 cup of the strawberry jello mix into the remaining cream cheese mixture.

Top the cream cheese mixture with the leftover strawberry mixture.

Finish with the rest of the whipped topping.

Chill for 1 hour or up to overnight in the refrigerator.

Top with the saved chopped strawberries when ready to serve.
