Bars with Lemon Crumbs are a sweet treat with a Filling: Lemon and taste sandwiched between two layers of oatmeal dough. They’re one of the most delicious lemon desserts I’ve ever tasted! If you like lemon treats, don’t miss out on my Lemon Bars and Lemon Brownies!

Bars with Lemon Crumbs

When life gives you lemons, make these Bars with Lemon Crumbs! They start with the oat crust from my Apple Cream Cheese Bars (without the cinnamon). And then the oatmeal layers are separated by a Filling: Lemon that you can taste in every bite. There is a fantastic fusion of texture and flavor in these bars… they are unlike any other lemon dessert on my website!

Ingredients in Bars

This dish is divided into two parts: the oatmeal layers and the Filling: Lemon.

Quick-cooking oats should be used. Quick oats are more processed than traditional oats, allowing them to cook more quickly. 

Sweetened Condensed Milk: When purchasing sweetened condensed milk, read the labels carefully. This recipe does not call for evaporated milk.

Lemon Juice: For the finest flavor, use freshly squeezed lemon juice from roughly 5 lemons. We tried this recipe using bottled lemon juice, but the taste was different. That is something I will address later.

Add a teaspoon of lemon zest to the filling for even more lemon taste in each mouthful.

Making the Crumble Topping (and the Crust!)

The first step is to make the crust, which will be baked for 12-15 minutes and then cooled before adding the filling. Combine the oats, flour, brown sugar, baking soda, and baking powder to form the crust.

Pour the melted butter over the ingredients and stir until it’s crumbly, but don’t overdo it!

This is crucial: measure out 2 cups of crust for the topping and put aside. Pour the leftover crust into a 9×9-inch baking dish that has been lined. Bake for 12-15 minutes, or until golden brown, pressing it firmly to the bottom of the pan. While you’re making the filling, set the crust aside.

How to Store Bars with Lemon Crumbs

Bars with Lemon Crumbs can be stored at room temperature in an airtight container for up to 2 days. If you store them in the refrigerator, they will last up to 5 days. You can freeze the bars for up to 3 months. 

Bottled Lemon Juice vs. Freshly Squeezed Lemon Juice

As I previously indicated, we tried these snacks twice: first with freshly squeezed lemon juice and again with store-bought juice. When tasted side by side, the bars produced with freshly squeezed juice came out on top by a wide margin. Of course, there is always that one odd man out who prefers the bottled juice. 

When compared to freshly squeezed juice, the bottled juice has a stronger artificial lemon flavor. The bars are still lemony and yummy if you just have bottled juice.

Oat Crust

  • 1 cup quick-cooking oats (80g)
  • 112 cup all-purpose flour (375g)
  • 1 cup (400g) packed brown sugar
  • a quarter teaspoon of baking soda
  • a quarter teaspoon of baking powder
  • 34 cup (170g or 112 sticks) butter melted

Filling: Lemon

  • 1 can sweetened condensed milk (14 oz)
  • 2 big yolks of eggs
  • 12 cup (122g) lemon juice (about 5 lemons)
  • 1 teaspoon zest of lemon
  • 18 tsp. kosher salt
  1. Preheat the oven to 350 degrees Fahrenheit and line a 9×9-inch baking sheet with parchment paper.

Oat Crust

  1. Combine the oats, flour, brown sugar, baking powder, and baking soda in a large mixing basin. Pour the melted butter over the top and stir until the mixture is crumbly. Make sure you don’t overmix it or the top will be crumbly.

  2. 12 cup of the mixture (about 2 cups) should be put aside for topping.

  3. Fill the lined baking dish with the remaining mixture. Firmly press into the pan’s bottom.

  4. Bake 12-15 minutes, or until a golden brown. Set aside to cool slightly while you make the Filling: Lemon.

Filling: Lemon

  1. Combine sweetened condensed milk, eggs, lemon juice, lemon zest, and salt in a large mixing basin. Blend until the mixture is smooth and creamy.

Assembly

  1. Cover the cooked oat mixture with the lemon mixture.

  2. Over the top, crumble the remaining oat mixture.

  3. Bake for 20-25 minutes, or until golden brown around the edges.

  4. Allow to come to room temperature before refrigerating for 1 hour before to serving. (This dish is best served at room temperature.)
