For the cookie cups itself, you’ll need the following Ingredients:
- Shortening
- Butter
- Brown Sugar is a kind of sugar that is used
- Vanilla
- Eggs
- Flour
- Soda (baking)
- Salt
- Cadbury Creme Eggs in Miniature
And here’s what we used to make the Easter egg hunt-themed cookie cups:
- Jelly beans — a variety of colors is recommended.
- Wilton icing is ideal for green icing! To make it seem like the grass in an Easter basket, add a little green food coloring.
What’s the best way to create them?
It’s easy to prepare these bright Easter cookies.
STEP 1: Prepare the dough for the cookies.
This is a basic dough that just takes a few minutes to prepare. It doesn’t even need to be chilled.
STEP 2: Roll out the dough and wrap it around the small eggs.

STEP 3: Cook
Fill the wells of a tiny muffin tray with dough balls. Bake the cookies for 9–12 minutes, or until golden brown. Allow for thorough cooling before adding the icing and jelly beans.
STEP 4: FINISH THE PROJECT!
Green icing should be piped onto the tops of the cookies. Arrange the jelly beans in whichever design you choose on top. Serve and have fun!

Ingredients
- 12 cup vegetable shortening
- 12 cup softened butter
- a third of a cup of granulated sugar
- 34 cup brown sugar, packed is a kind of sugar that is used
- 1 teaspoon vanilla extract
- 2 eggs, big
- flour (212 cup)
- 1 teaspoon Soda (baking)
- 1 teaspoon kosher salt
- 30 Cadbury Creme Eggs in Miniature unwrapped or solid chocolate eggs
Frosting: Green Buttercream
- 14 cup vegetable shortening, solid
- 14 cup unsalted unsalted butter (at room temperature)
- 2 cups powdered sugar, sifted
- 1 teaspoon of milk
- 12 teaspoon vanilla extract (pure)
- a sprinkle of salt
- 50 drops green food coloring (more or less depending on desired shade)
- 1 cup small jelly beans, various
Instructions

Preheat the oven to 350 degrees Fahrenheit. Spray a mini-muffin pan with cooking spray and set aside.

In a mixing dish, cream together butter, shortening, both sugars, and vanilla extract.

Add the eggs one at a time, mixing well after each addition.

In a separate bowl, whisk together the flour, Soda (baking) and salt.

Add the flour mixture to the creamed mixture in a slow, steady stream.

Wrap a little less than a spoonful of dough around one little Cadbury egg until it is fully coated. After wrapping the egg, roll it around in your palms to ensure that it is equally distributed. If you use more than a tablespoon of dough, the dough will spread out over the surface of the pan as it bakes.

Place the muffins in the muffin tray that has been prepped.

Preheat oven to 350°F and bake for 9-12 minutes, or until golden brown.

Allow 15-20 minutes for the cookies to cool in the pan before twisting them out. Gently twist the cookie with your fingers to extract it. IMPORTANT: If the cookie seems to be too soft or is breaking apart, wait 2 minutes before attempting again. After the cookies have been somewhat cooled, carefully pull them out of the muffin cups if they have been greased well enough. Allowing the cookies to cool fully in the pan will cause them to adhere to the bottom, making them even more difficult to remove.

Allow for thorough cooling before icing.

Serve with jelly beans on top.

Cream the shortening and butter together in a mixing dish until smooth and creamy. Mix in the vanilla extract.

Scrape down the sides of the basin as required as you add the powdered sugar one cup at a time. The frosting will seem dry after all of the powdered sugar has been applied.

Mix in one tablespoon of milk, scraping down the sides as required, until light and fluffy.

Gradually add as many drops of food coloring as you like until you have the appropriate green hue.

Fill a piping bag halfway with frosting and a Wilton Tip #74. Using a pastry bag, pipe grass onto each cookie cup, then top with 3-4 jelly beans.
