No, you don’t need to know how to play chess in order to cook this pie! In reality, the name is a bit of an enigma. It’s possible that it comes from a baker declaring that it’s ‘Jes’ pie (Just pie). It might also be due to the use of chestnut meal (now cornmeal) in the recipe or the storage of the pie in a pie chest (pronounced without the letter ‘t’). This pie is a southern-style custard pie that will fulfill your sweet taste, whatever you name it!
Ingredients for Pie
As I previously indicated, many of the components are common household items.
You may use a store-bought pie crust, but I recommend using my Homemade Pie Crust instead. If you follow the recipe exactly, you’ll end up with two crusts; reserve one to use in another dish, such as my Chocolate Pecan Pie.
Cornmeal: Cornmeal is a common ingredient in chess pie, however other individuals disagree (and stick to just using flour). Both cornmeal and flour were utilized.
Buttermilk: Make your own homemade buttermilk if you don’t have any on hand.
Garnish with a little dusting of confectioners’ sugar on top of the cooked pie. Then finish it off with some homemade whipped cream!
Pie Crust
In this recipe, the first step is to roll out the pie dough into a 12-inch circle and set it in a deep-dish pie plate. You may use a store-bought crust or make your own. (The crust must be blind-baked in any case.) I used a 9-inch pie dish, but the baking time would need to be altered if you use a smaller pan.
Remove any extra crust, leaving enough to tuck under and crimp at the edge. (If you don’t want to do any scalloping, just crimp the crust with a fork.) Place the pie crust in the freezer for 15 minutes.
Remove the crust from the freezer and line it with parchment paper after it has firmed up. Pie weights, uncooked rice, or dried beans may be used to fill the pie crust. The crust should not be docked because the filling is too runny. Preheat the oven to 375°F and bake the crust for approximately ten minutes. Remove the crust from the oven and gently remove the parchment paper and weights. While you’re making the filling, set the crust aside.
Chess Pie: A Step-by-Step Guide
It’s time to make the filling and bake the pie once you’ve blind-baked the crust! Reduce the oven temperature to 350 degrees Fahrenheit before you begin. To create the filling, combine the melted butter, sugar, and vanilla in a mixing bowl. Then, one by one, add the eggs. This will allow each egg to fully incorporate with the other ingredients.
Mix in the cornmeal, flour, buttermilk, and vinegar after the eggs have been incorporated. Fill the pie crust with the filling and bake for 50-55 minutes. Remove the cooked chess pie from the oven and cool for 30-45 minutes at room temperature before putting it in the refrigerator to chill fully.
Dust the pie with confectioners’ sugar before serving. If it isn’t sweet enough for you, top your slice of pie with some whipped topping! Refrigerate the pie for up to three days before serving.
How to Tell if a Chess Pie is Ready
Custard pies might be difficult to tell when they’re done. Check to see whether it still jiggles a bit in the middle, since this is what you want. Of course, it’s not done if it’s too wet and sloppy. If there is no jiggle, though, it is most certainly overbaked.
If you don’t mind putting a digital thermometer in the pie, when completely cooked, it should read 200°F.
Is it possible to freeze a chess pie?
Yes! The pie may be frozen for up to three months when it has fully cooled. Place the pie in a freezer-safe container after wrapping it with plastic wrap. Make sure the container is labeled and dated. Allow it to defrost in the refrigerator before serving.
