We added a blue touch to our well-liked Raspberry Cream Dream Bars recipe! You’re going to like these no-bake bars, whether you’re celebrating the impending birth of a boy or just seeking for the ideal blue raspberry treat.
The tart, sweet, and creamy cheesecake is the perfect complement to the tart, sweet raspberry filling. They taste just like the blue raspberry novelty sweets I used to get from the ice cream truck when I was a youngster when they are served cold.
Blue raspberries don’t really exist, did you know that? Sweets with blue coloring applied to raspberries are known as blue raspberry desserts. The cheesecake bars appear a little bit more spectacular thanks to the splash of vivid blue hue.
The best part: making Blue Raspberry Dream Bars couldn’t be simpler!
WHAT DO I REQUIRE?
The ingredients for these cheesecake bars are similar to those in all of my Dream Cocktails.
What you’ll need for the crust is:
- Cookie nilla wafers
- salt-free butter
What you’ll need for the blue raspberry JELL-O layer is:
- raspberry blue gelatin
- heating up water
- icy water
- cheese, cream
- food coloring in blue
- optional raspberry extract I didn’t use raspberry extract when I made these, but if you like a stronger raspberry taste, you may use a teaspoon.
- Use my home-made stabilized whipped cream in place of Cool Whip.
These are the components you’ll need for the Layered Cheesecake:
- cheese, cream
- granulated sugar
- Vanilla flavoring
- additional cool whip for serving!
- blue sprinkles or sugar for decoration
How do I prepare this dish with blueberries?
Make the cheesecake crust in Step 1.
First, grind the Nilla wafers into crumbs in a food processor. Add the melted butter and blend with a spatula.
Put the mixture in a baking dish that has been parchment paper-lined at this point. While you create the other raspberry dream bar layers, put the crust in the freezer to cool.
Making the raspberry cream filling is step two.
Start by dissolving the gelatin powder in heating up water. Then whisk in icy water and chill the JELLO mixture in the fridge for about 10 minutes.
The JELLO should cool down but not set, as a pro tip! Don’t overchill the filling or it won’t come together.
While the JELLO cools, beat together cheese, cream with raspberry extract and food coloring in blue. Gradually incorporate the cooled JELLO mixture and mix to combine. It may take a while, but the more slowly you add the blue gelatin to the cheese, cream mixture the less clumps of gelatin you’ll get.
This filling should cool in the fridge for an hour. The ideal consistency will be reached as it thickens and cools.
Create the Layered Cheesecake in Step 3.
For the cheesecake, beat together cheese, cream with granulated sugar and Vanilla flavoring. Fold in one cup of cool whip.
Assemble in Step 4!
It’s time to put all those tasty layers together to make the best ever blue raspberry cheese, creamcake bars!
- Over the frozen crust, spoon the cheesecake. To create a single layer, distribute it evenly all over.
- Fold the cooled blue raspberry cream mixture into the leftover Cool Whip from the container.
- Spread the raspberry cream equally after carefully pouring it over the Layered Cheesecake.
- Place in the refrigerator for at least 6 hours or for the whole night.
Slicing and Serving Advice
The bars are easily and fuss-freely cut thanks to the parchment paper. Grab the parchment’s corners and remove the whole pan of uncut bars out at once.
Slice through the bars with a big knife that has been cleaned with hot water and dried with care. The bars will appear picture-perfect and the neat cuts will produce less crumbs.
Add extra Cool Whip or whipped cream to the top of each bar. Before serving, top with BLUE SUCCEED, sprinkles, or other edible decorations!
How should I keep them?
The best way to enjoy dream bars is cold, right from the fridge! Any bars you don’t want to consume straight away should be kept securely wrapped in the fridge. Enjoy for optimal flavor within three days.

Dream Bars with blue raspberry cream
Dream Bars with blue raspberry cream make a perfect sweet treat for summer or a gender reveal party! Classic raspberry cheesecake bars are tinted blue with a creamy whipped topping and blue sprinkles in this easy, fun, no bake delicious dessert recipe.

Instructions
Crisp Nilla Wafers

Use parchment paper to line an 8 x 8-inch baking sheet so you can simply remove the bars to slice and serve them.

5 tablespoons of butter should be melted in a medium bowl in the microwave for around 30 seconds. If required, stir and melt for a further 5–10 seconds.

The Nilla Wafers should be pulsed in a food processor until they resemble tiny crumbs. With a rubber spatula, combine the melted butter and cookie crumbs until well combined.

Spread the mixture evenly in the prepared baking pan by pouring it in and pushing down. Pan should be frozen for at least 30 minutes while the remainder of the dish is being prepared.
raspberry blue gelatin

Into a 2-cup measuring glass, mix the raspberry blue gelatin with 3/4 cup heating up water. Stir until dissolved. Add the 3/4 cup icy water and stir. Place into refrigerator until completely cooled, but not set – about 10 minutes.
Layer of Blue Raspberry Cream

In a mixing bowl, beat 8 ounces of the cheese, cream with the raspberry extract and red food coloring.

Pour the cooled gelatin mixture in gradually while combining everything. Place in the refrigerator to cool and thicken for an hour once absolutely smooth. View Note.
Layered Cheesecake

In a mixing bowl, beat another 8 ounces of cheese, cream, the confectioners’ sugar, and vanilla together until smooth and creamy. With a rubber spatula, fold in one cup of the Cool Whip.

Using an offset spatula, drop portions of the cheesecake mixture over the chilled crust and distribute to create an equal layer.
Continued Blue Raspberry Layer

Fold the remaining Cool Whip (approximately 2 cups) into the cooled blue raspberry cream mixture with a rubber spatula until it is well combined and spread.

Gently pour the blue raspberry cream onto the Layered Cheesecake and spread evenly with an offset spatula.

Place in the refrigerator for at least 6 hours or for the whole night. I’ve found that overnight is best.

When slicing, pull the bars out of the parchment and out of the whole pan. Slice through the bars using a big knife after running it under hot water, allowing it to dry between cuts if needed. This will make clean cuts possible.

Serve with more Cool Whip or my Stabilized Whipped Cream dollops and garnish with BLUE SUCCEED or other decorative elements.
BLUE SUCCEED

In a small bowl, place 2 tablespoons granulated sugar. Add 2 drops of food coloring in blue and mix thoroughly. Pour sugar onto a folded paper towel and set aside to dry. Sprinkle over the bars before serving, if desired
Notes
Use the amounts of water in this recipe required to mix the raspberry gelatin. DO NOT use the amounts listed in the box Instructions. We want a more stable gelatin and less of it. If raspberry cream mixture is left in the refrigerator for more than one hour, the gelatin will harden and form. This isn’t an issue unless you want a completely creamy layer for the top with NO blue gelatin specks. Plus, the more slowly you pour the gelatin into the cheese, cream mixture the more evenly it will spread without clumping.
