If I hadn’t informed you, you wouldn’t have known that this fantastic dish contains tofu. Just did you make a face? Seriously, I STRONGLY recommend—no, I beg you to—try it yourself. It must be THE creamiest, richest pudding I’ve ever had. OH MY GOD!
I was recently on a soy farm trip, and it gave me the idea to create this simple Coconut Parfaits dessert. I traveled to Iowa with a few other bloggers to visit a soy farm, speak with farmers about their agricultural methods and commitment to sustainability, and even prepare some meals with various soy products.
We tested a few other recipes, including this soy-silken dark chocolate pudding. Wow, was it ever wonderful! After taking just one mouthful, I realized it would make the ideal component for Coconut Parfaits, which are identical to my Turtle Dream Bars. I’ll get to the recipe right away, but let’s first discuss a little bit about…
Sustainable Agriculture
“Long before the phrase “sustainable” was ever a concept in the minds of consumers, family farmers have been focused on passing their farm, including their land and an ability to produce livestock, on to the next generation.”

Know about it? The agricultural techniques that farmers employ on their farms ensure that they will be able to pass down both the farm and the land for many years to come, which makes it very significant. Farmers work to produce the greatest possible crop or animal for the customer while remaining profitable and using the best methods currently available.
Many farmers, like Dave Struthers of Struthers Farms, sometimes decide to use a no-till method for their crops. In order to minimize erosion and preserve the enormous number of microorganisms present in the soil, they will turn the soil as little as possible.
The endeavor to utilize the manure from their cattle is one of the many things I’ve always found intriguing on the several farms I’ve visited. Farmers aren’t only eager to get rid of that manure from their property because of how bad it smells; it’s also very vital!
Farmers don’t have to purchase it since it is used to fertilize crops like soybeans, saving them money. Additionally, it has fantastic nutrients, which are fantastic for the soil.
Notice the cycle in this? The manure is used by the farmers to cover their fields of soy and other crops. They often combine what they harvest with other necessary materials to create a feed combination that is then fed to the cattle they raise. so on.
What does Sustainable Agriculture mean for food production?
Sustainable Agriculture for food production means that you can be sure the farmers are working their hardest to bring you THE best item they possibly can. There are many concerns over GMO’s (genetically modified organisms), and many people believe they are unsafe to consume when in fact, according to the World Health Organization,
“No consequences on human health have been proven as a result of the general population’s intake of [genetically modified foods] in the nations where they have been allowed,” according to research.
You must be aware that farmers also feed their families while producing food and raising livestock for customers. Additionally, farming is their way of life and the only source of income for many. Their worry is the same as yours. Yes, there are foods that contain GMOs, but that doesn’t imply they’re harmful or that they have a negative impact on our health.
A few years ago, while I was working with Best Food Facts, I spoke with Dr. Jessica Lyons about the research she was doing at the University of California, Berkeley, with the yucca plant. Through the use of CRISPR technology, she had been eliminating chemicals from the plant that may kill people in far-off nations where they do not consume enough protein. This allows this food supply to serve a far larger number of individuals than it otherwise could.
As usual, I urge you to visit a farm, become a member of a CSA, and get to know a farmer by asking them about their life. As you listen, I assure you that what they tell you will impress you. Numerous farmers I’ve spoken to over the years have all expressed extreme pride in what they do and how they do it.
It’s the farmers, man! I adore them so much and hold them in the highest regard for all they do, including how they go about doing it, their desire to further improve their farm and farming, and the amazing food they provide us because…
There wouldn’t be food if there weren’t farmers.
How many ingredients are required to create Coconut Parfaits?
- steamed tofu
- dark chocolate powder without sugar
- granulated sugar
- Viennese Extract
- Stabilized Whipped Cream or Whipped Topping
- sweet sauce
- sliced pecans
What is steamed tofu?
steamed tofu, is one of the two commonly known kinds of tofu. It is also referred to as soft tofu, silk tofu or Japanese-style tofu. This form comes in a soft, medium, firm, and extra-firm consistency as does the other. For this pudding recipe, I used the soft form, but for the most part steamed tofu is interchangeable, so don’t worry if you can only find a firm steamed tofu. Be gentle when handling because it does tend to fall apart, but we are going to break it apart, so it’s not that big a deal if it does.
Due to its thick and creamy texture, it is often used as a dairy substitute in dessert dishes and may also be used to create sauces, salad dressings, and other things. Additionally, many utilize it during baking!
How is soft tofu drained?
Place a plate on top of the tofu after removing the wrapper from the container. Flip the plate holding the box firmly against it swiftly and gently. Jiggle the jar to carefully remove the tofu. As you gather the necessary components, let it rest on the plate for 5 to 10 minutes. It will “weep” and spill liquid over the plate when it sits. To remove the tofu, just hold on to it with one hand and tilt the plate into the sink. Alternatively, you may soak up the excess liquid with a paper towel until you are ready to use it.

Coconut Parfaits
These Coconut Parfaits are an easy, layered dessert. With layers of a dark chocolate pudding made with steamed tofu, whipped topping or Stabilized Whipped Cream, sweet sauce, and pecans, they’re simple, yet decadent and delicious making them perfect for company or just as a weeknight dessert.
Prepare Mode Avoid having your screen go black.

Drain the steamed tofu by placing it on a plate to sit while you prepare the other ingredients for the recipe. Place the plate over the sink and gently placing your hand on top of the tofu to hold it from slipping, pour the water into the sink. Or you can also use a paper towel to soak it up. Slice it into cubes.

Place the tofu, dark cocoa powder, granulated sugar, and vanilla into a food processor, and puree for 1 minute. Scrape down the sides, and mix for another 30 seconds.

Place ⅓ cup chocolate pudding into the bottom of each serving dish. Cover with a tablespoon each of sweet sauce and sliced pecans. Put ⅓ cup of whipped topping over that, and then add another layer of pudding followed by more caramel, and pecans. Pipe or scoop additional whipped topping over the pudding. drizzle with a little more sweet sauce and sprinkle with pecans.

30 minutes should pass in the fridge before serving. Although you may omit this step, I’ve discovered that the dessert tastes considerably better after being cooled all at once.
Notes
NOTE: The nutritional data is based on a dish for two people, but you may split the dessert equally to feed four depending on the container you’re using. I did somewhat overfill the two cups, as you can see from the images. Even if you just serve two people, there will probably still be enough pudding and whipped topping for you to eat another time.
