When I’m hungry, I prefer sweets, particularly cookies, over salty appetizers. That’s why I was amazed at how many of these cornmeal zucchini chips I ate all at once!
Half of the batch was gone before I realized it. Oops.
Unlike store-bought vegetable chips, these simple zucchini chips are cooked in the oven for a crispy texture and no oil. You must try this Zucchini Chips Baked in the Oven dish, whether you’re aiming to eat more vegetables or just have a surplus of garden zucchini.
What do I require?
I made excellent Parmesan Zucchini Chips using the following Ingredients:
- Zucchini
- Milk
- Freshly grated parmesan cheese is excellent!
- powdered garlic
- breadcrumbs from Italy
- Cornmeal
Cut the zucchini ends off and slice it before creating the chips. The peel does not need to be removed, but it should be sliced as thinly as possible. I discovered that the thinner slices were significantly crispier when I tested the recipe.
With this simple OXO slicer set, I cut mine approximately 1/8′′ to 1/4′′ thick.
How do I go about making them?
Place the milk in a small basin after slicing the zucchini. In a separate dish, combine the other Ingredients.
Dredge each zucchini slice in the cornmeal mixture after dipping it in the milk. You may bake or air fry the pieces after they’ve been well coated.
Zucchini Chips in the Air Fryer
Place the zucchini slices in the air fryer basket to produce zucchini chips. Spray the zucchini with olive oil and air fry for 5 minutes at 400°F. Turn the zucchini chips over, drizzle with olive oil, and air fried for 5 minutes more.
Avoid overcrowding the air fryer basket! The zucchini should be laid down in a single layer with no overlap. To make this feasible, you may need to air fried the zucchini chips in batches. They won’t cook properly otherwise.
Zucchini Chips Baked in the Oven
Spray a baking sheet with cooking spray after lining it with paper parchment. Arrange the zucchini on the baking pan in a single layer. Bake for 30 minutes at 400°F, or until the vegetable chips are golden brown.
For even crispiness, I suggest turning the breaded zucchini chips halfway through. Also, keep an eye on them while they bake since some of the thinner slices may burn.
Is it possible to prepare them ahead of time?
These cornmeal-crusted zucchini chips should be eaten right away. They will get soft and mushy if you keep them.
Thankfully, they’re simple to prepare, so you may indulge anytime you want!

Ingredients
- 12 quarts zucchini 1 zucchini, medium
- ¼ cup breadcrumbs from Italy
- 14 cup grated Parmesan cheese
- 14 cup cornmeal, yellow
- ½ teaspoon powdered garlic
- ¼ cup milk
Instructions

Preheat the oven to 400 degrees F, or see the notes below for instructions on how to cook them in an air fryer.

Line a baking sheet with parchment paper and set aside.

In a bowl or shallow dish, combine bread crumbs, grated cheese, cornmeal and powdered garlic. Mix well.

Fill a small dish halfway with milk.

Slice the zucchini into 1/8 – 1/4-inch thick slices. Put them in the milk one at a time, being care to cover all sides.

Place the slices in the crumb mixture and coat well.

Bake until the chips are gently brown, about 25–30 minutes.
Notes
To use the air fryer, arrange the zucchini in a single layer in the basket. Cook for 5 minutes at 400°F after spraying with olive oil. Cook for another 5 minutes after flipping the chips and spraying them with olive oil. Because all of the zucchini may not fit in the basket, you’ll probably have to cook in batches.
