We’ve all had red, white, and blue sweets that looked festive but left much to be desired in terms of flavor. As a result, I’m delighted to report that this red, white, and blue layer cake is really scrumptious.
The cake layers are made from scratch and have a fluffy crumb and the right vanilla taste. It’s even better with the rich, creamy vanilla buttercream icing poured on top!
What do I require?
You’ll need these items to make the red, white, and blue cake layers.
- Flour
- sugar powder
- soda bicarbonate
- Salt
- butter without salt
- Sugar
- Whites of eggs
- Extract of vanilla (clear)
- Buttermilk
- Food gel coloring in red and blue

What are the best sprinkles?
You can use any variety of Sprinkles of red, white, and blue—or even just red and blue sprinkles, since the frosting is white. If you have star shaped sprinkles, feel free to throw a few of those onto the cake for some extra Fourth of July flair!
Can I make this cake using salted butter?
Yes, salted butter will do the trick! If you use salted butter, leave out the additional salt in the cake mixture and icing.
Can I use regular Extract of vanilla?
Extract of vanilla (clear) ensures you have a center cake layer that’s truly white. Regular Extract of vanilla tastes just as delicious but will give the center cake layer a more yellow appearance.
How can I go about making it?
To make the cake batter, combine all of the Ingredients in a mixing bowl. Divide the batter into three bowls equally. To ensure that the cake layers are evenly distributed, I prefer to use a kitchen scale.
If you don’t have access to a kitchen sale, you may use a measuring cup or simply guess.
This is where the cake gets its color. Add a drop of red food gel to one dish and a drop of blue food gel to the other. Stir in the food coloring until it is evenly distributed.
Fill three separate round cake pans with the red, white, and blue cake batter. Bake until a toothpick inserted in the middle comes out clean, about 35 minutes.
Allow the cake layers to cool fully before icing.
To make the vanilla buttercream, beat butter with an electric mixer until it looks light and fluffy. Beat in the sugar powder to form a thick icing, then mix in Extract of vanilla and heavy cream until it reaches a spreadable consistency.
You’ve cooked the cake layers and prepared the icing. It’s time to put everything together!
Place the blue cake layer on a serving dish or cake stand. Pipe frosting around the borders and spread it evenly over the cake using a spatula. Then repeat with the white and red layers.
Spread a thin layer of buttercream around the edges of the completed layer cake to create a crumb coat. This process ensures that the final layers of icing are smooth and uniform, resulting in a beautiful cake.
Freeze the cake for around 20 minutes to gently stiffen the crumb coat.
Finally, using an offset spatula, spread a thick layer of icing over the edges and top of the cake until thoroughly coated. You may now put the finishing touches to your project.
Cake Decorating Ideas for the Fourth of July
Here’s how I made the ideal 4th of July flag cake.
- Fill a frosting bag with the remaining frosting and a star-shaped tip.
- To pipe buttercream around the whole perimeter of the cake, hold the frosting bag in your right hand and gently rotate the cake with your left hand.
- Sprinkle a few sprinkles over the edge of the cake. Sprinkle the remaining sprinkles on top.
How can I make the icing more colorful?
Paint two lines of coloring on opposing sides of your piping bag if you want a bit red and blue in your white frosting. This will add color streaks to the icing without entirely affecting the hue.
What should I do with it?
Cover and keep your Patriotic Cake at room temperature for up to 3 days. Refrigerate it covered for a longer period of time. It will keep for up to one week in the refrigerator.
Is it possible to prepare the cake layers ahead of time?
Yes, the red, white, and blue cake layers may be baked ahead of time and frozen until ready to create the 4th of July dessert.
Wrap the cakes in plastic wrap or freezer bags to keep them fresh. Store for up to 3 months in the freezer. Allow to defrost completely before icing and serving.

Ingredients
Cake
- 3 cups all-purpose flour plus additional flour to dust cake pans
- 2 teaspoons sugar powder
- 1 teaspoon soda bicarbonate
- 12 teaspoon sodium chloride
- 1 cup butter without salt room temperature
- 1 cup sugar (granulated)
- 4 Whites of eggs room temperature
- 2 teaspoons Extract of vanilla (clear)
- 12 cup whole milk or buttermilk
- Food gel coloring in red and blue 1 drop of each
Frosting: Buttercream
- 2 cups butter without salt room temperature
- 6-8 cups sugar powder
- 2 teaspoons Extract of vanilla
- ¼ cup whipped heavy cream
- 12 teaspoon sodium chloride
- 1 cup Sprinkles of red, white, and blue
Instructions

Preheat the oven to 350 degrees Fahrenheit. Butter or shortening three 8 or 9-inch cake pans and sprinkle with flour. Place aside.

Start with making the cake batter. In a medium bowl, whisk together the flour, sugar powder, soda bicarbonate, and salt until well combined.

Cream the butter and sugar together in a separate large mixing bowl with an electric hand mixer on medium speed until light and creamy.

Add the Whites of eggs and Extract of vanilla, and continue beating on medium speed until mixed.

Pour in approximately a third of the dry ingredients and beat on low speed until barely incorporated.

Fold in the remainder of the dry ingredients, as well as the buttermilk, until just mixed.

Divide the batter into three small basins equally. This will be much simpler with a digital scale than just eyeballing it.

In two separate bowls of batter, add approximately 1/8 teaspoon (or a drop) of red gel food coloring and blue gel food coloring, and stir until the colors are thoroughly combined.

Fill each of the three cake pans halfway with batter. Bake for 25 minutes in a preheated oven, or until a toothpick inserted in the center of the cakes comes out clean. Allow the cakes to cool on a cooling rack until room temperature.
Frosting: Buttercream

While the cakes are cooling, make the Frosting: Buttercream. In a large bowl, cream the butter with an electric hand mixer on medium speed for about 3 minutes, or until the butter is very smooth.

Gradually add the sugar powder, and continue mixing with the hand mixer until the frosting is thick and stiff.

Add the Extract of vanilla, salt, and whipped heavy cream, and continue beating until everything is mixed.

Fill a piping bag with the frosting and a big round tip. Pipe even circles around the top of the blue layer of the cake and place it on a dish or cake stand. Using a spatula, spread the icing out. Carry on with the white and red cake layers in the same manner.

Spread a thin layer of frosting over the borders of the cake once you’ve finished icing the top red cake layer. Your crumb coat will be this. Freeze the cake for 20-30 minutes, or until the crumb coat has hardened somewhat.

Spread a thicker layer of frosting around the borders of the cake and pipe some of it on top using a big star piping tip in a piping bag.

Pour the remaining sprinkles on top and press some around the bottom borders of the cake.

Allow to cool before serving.
